The purpose of the study: to determine the conditions for intensification of extraction of polysaccharides from plant materials under the action of electromagnetic fields. The main modern direction of development of physical methods of intensification of extraction of target components from vegetable raw materials is determined. This is processing by pulsed electromagnetic fields of different intensity. Experimental equipment for pulse electromagnetic field treatment of plant raw materials has been adapted. The parallel connection of two sources (single-phase and three-phase) was used as a pulse current generator to obtain rectangular pulses. The process of aqueous extraction of polysaccharides from vegetable raw materials accompaning by pulse, alternating and direct current through suspension has been experimentally investigated. The high efficiency of pulse current intensification of extraction is shown. This kind of treatment allowed to reduce the time for obtaining water-soluble polysaccharides of hyssop 3 times less in comparison with traditional methods and to reduce energy consumption by 20 times more. The significance of the pulse current parameters for efficient extraction was established. The shape of the pulse (rectangular pulse is better than exponentially damped), frequency (for the treated suspension of hyssop / tap water to extract the maximum amount of water-soluble polysaccharides it is 500 Hz), pulse duration (millisecond range), processing time (maximum processing time of vegetable raw materials for extraction of target substances to the leach will not exceed a few minutes) are important for extraction efficiency.
