On the basis of the received knowledge to develop recommendations for reception of qualitative and safe production. Research methods - epizootological, bacteriological, clinical, pathological, statistical. By summarizing and analyzing the data of microbiological studies of poultry products in the Dnipropetrovsk region, it is theoretically proved by the ways of contamination of poultry products with bacterial pathogen (Proteus spp., Salmonellа spp., L. Monocytogenes). So, the sources of salmonellosis are infected types of poultry products indicates a geographic serotypic tendency, which is due to the dominance of Salmonella group D among poultry in the Dnipropetrovsk region. Also, the analysis the of veterinary statistical reporting results (Dnipropetrovsk region 2019 year) on microbiological indicators of seven types poultry products (semi-finished products and culinary products from meat, in particular from poultry - 715 samples; sausages, in particular poultry - 543 samples; poultry meat - 362 samples; eggs - 302 samples; egg products - 55 types; by-products from birds - 31 samples) and found a violation of the safety criteria for food products from poultry and raw materials, as evidenced by the isolation of pathogens Salmonella spp. and L. monocytogenes. A revision of the criteria for the hygiene of technological processes was noted, as evidenced by the change in the permissible limits of QMAFAnM at 0.9-2.9% test samples. Based on the results for 2019 and 2020, developed and approved on the methodological council of the NSC "IEKVM" methodological recommendations "Veterinary and sanitary control of poultry products on contamination with salmonellosis and pasteurellosis " (protocol № 4 dated 29.10.2020).
