The purpose of the study is to develop scientifically based technology of minced meat pancakes with milk protein for forming the diet of servicemen, research of nutritional and biological value of new minced meat, directions of using minced meat technology in culinary production and possibility of introduction of developed technologies on restaurant production base. Research methods - standard physicochemical, rheological, microbiological, organoleptic, experimental planning methods and mathematical processing of experimental data using computer programs. The scientific novelty of the obtained results lies in the theoretical and experimental substantiation of a new technology for the production of minced semi-finished products with algal cystosira, which allows to obtain products with high organoleptic properties and high biological value.
