The aim of the study is to improve the elements of the technology of storage and processing of fruits and vegetables in order to provide a biologically valuable raw material of the population and the food industry. Methods of the study is general method (hypotheses, analysis, synthesis, analogy); industrial (experimental storage and processing); laboratory (organoleptic, biometric, biochemical commodity and engineering analyzes); methods of correlation and regression analysis (to identify factors influencing the quality of the product). Complex estimation of roots of carrots, pumpkin fruits, cucumbers of various varieties and hybrids for economic, biological, biochemical, organoleptic and technological indices was carried out. Changes in the content of dry matter, dry solvent, sugar, carotene during drying and storage were investigated. Selected the most suitable varieties of carrots for long-term storage, obtaining biologically valuable dried products, improved way of picking root crops of carrots by adding natural spices. The most suitable for pickle cucumbers is allocated, and the influence of varietal features and fruit size on the quality of fresh and processed products is grounded. According to research results, monograph have been published.
