The object of research is the process of concentrating organic fruit and berry pastes. The subject of research - organic fruit and berry pastes, rotary-film evaporator. Most of the available food products on the markets of European countries contain a certain share of natural concentrated products of a high degree of readiness (juices, various confectionery products, etc.). The efficiency of their use is associated with the maximum preservation of the natural properties of raw materials in the form of one-component and multi-component blended systems. Such blended systems increase: physiological and functional properties of food products based on them, the immune component and replace synthetic dyes and impurities with organic ones. Deterioration of the ecological situation confirms the expediency of finding innovative engineering and technological solutions for the intensification of heat and mass transfer processes, in particular concentration to ensure the production of quality organic products at an affordable price. One of the areas of resource efficiency of the process of concentrating organic raw materials on the basis of modern implementations is the use of secondary heat in rotary film evaporators (RPV). This approach minimizes the component of rapid physicochemical structural change of organic raw materials of their initial properties at an important heat and mass transfer stage of its processing.
