The aim of the study is to create short-stem winter-hardy high-yielding winter rye varieties of new generation for targeted use of grain with high protein content, low pentosan content in grain and with the desired chemical composition of essential amino acids of grain for food production, bread, diet and baby food. Research methods. Development of breeding material in nurseries was carried out according to the full scheme of the breeding process. The source material was created by intraspecific hybridization methods. Field and laboratory studies were performed using generally accepted methods. The following studies were also conducted: analysis of biochemical indicators of rye grain quality (amino acid composition, pentosan content, dry plant biomass content, protein and starch content); trial baking; the nature of the grain; viscosity and falling number of aqueous extract of rye flour; content of micro- and macroelements, heavy metals and radionuclides. The obtained indicators were processed by the methods of variation statistics. The results of the study and their novelty. The characteristics of winter rye breeding material and the results of its evaluation are given. Forms that differ in productivity, improved amino acid composition, resistance to disease, drought resistance and a number of other valuable features have been selected. A working collection of source material of new rye genotypes has been formed. New forms (hybrid populations, lines) of rye have been created. New promising genotypes of rye have been transferred to the National Center for Plant Genetic Resources of Ukraine. An application has been submitted to the Ukrainian Institute of Plant Variety Examination for passing the qualification examination with new rye varieties Aldana and Yelika.
