Since the requirements for safety and certain indicators of food quality are mandatory in accordance with the norms of the current Law of Ukraine "On the Basic Principles and Requirements for Safety and Quality of Food Products", the work performed will contribute to the proper provision of the population of Ukraine with safe and high-quality food. In the course of the work, the available scientific and technical information and the current regulatory documents for the storage of the main groups of food products were studied and analyzed, based on the criteria of food safety and minimization of nutritional value losses. Methods for predicting the course and shelf life of food products based on food safety criteria and minimizing losses in nutritional value were scientifically substantiated. Based on the results of summarizing the work on the topic, an Analytical Note was compiled outlining the scientific principles for determining and predicting the safe storage periods for the main groups of char products. The work performed will contribute to solving the of minimizing the spoilage of foods during its storage and the loss of nutritional value of these products, which will predictably become an important contribution to achieving an appropriate level of food safety and resource conservation in the agro-industrial complex. The implementation of the work will contribute to the further improvement of measures for proper quality assurance and food safety, which will positively affect the health of the population, ensuring its sanitary well-being. Another important positive aspect will be the possibility of rational planning of food use within scientifically based storage periods will reduce food losses, thus contributing to the achievement of an appropriate level of food security of the state.
