The purpose of the study: development of innovative and improvement of existing technologies of food products with health properties for the human body. Research methods and equipment: general (analysis, synthesis, analogy); special (clinical, differential scanning calorimetry, organoleptic, physicochemical). The development of the topic was based on the content of existing regional and state programs for public health and resource conservation; theoretically studied the problems of food quality in conditions of increased stress, in particular related to the ongoing pandemic, described trends in the formation of modern food production and new forms of translation of scientific knowledge at production facilities; developed technologies, under the conditions of introduction into production, will allow to improve the health of the population and improve the living conditions of society; resource-saving technologies have been obtained, which practically do not require re-equipment of productions and retraining of personnel. The developed technologies allow to increase the range of health-improving food products produced in industrial productions and restaurants of Ukraine, as today there is a lack of such technologies and a very limited number of scientific results; there are virtually no scientifically sound recommendations for the production and consumption of health products described in the report. Effectiveness of implementation: the specified technologies and methods of production of health-improving food products at the expense of innovative ideas will allow to reduce the amount of energy consumption, improve the quality of food products; the proposed developments can be used as export items.
