The purpose of the work - to investigate the work of the technological area, to identify inconsistencies in the work and theoretically justify the need to modernize the control system of the evaporator within the concepts of Industry 4.0 Research methods - methods of mathematical modeling of the technological process of juice evaporation, methods of designing neural fuzzy and neural network regulators, processing and analysis of the results. During the study of the evaporation section, deviations in the operation of the automation system were detected - on the display mnemonic, the level in the evaporator corresponds to the task, and in the case itself gradually decreases over time. An explanation is possible: condensate enters the buoy chamber through the upper tube of the buoy chamber. Its density differs from the state of the syrup in the body, it arrives constantly and faster than it has time to dissolve in the buoyancy chamber with the syrup. As a result, these deviations can lead to caramelization of the upper part of the evaporation chamber of the apparatus, which can usually lead to increased steam consumption and improper operation of the apparatus itself. A comparison of the operation of the PID and the neural network controller according to the mathematical model of the evaporator was performed and a number of advantages of the neural network controller were revealed: shorter control time (10 s, and in PID - 70 s), smaller amplitude of oscillations. .....
