It was determined that the range of the tested concentrations of phycocyanin in purified water should be 0.02–0.16%. In the spectrum of phycocyanin two clear absorption maxima were detected at wavelengths of 277 and 619 nm. A purity factor of 1.5 was calculated, which indicated the nutritional qualification of phycocyanin provided by the Lithuanian partners. A method for studying antioxidant activity was developed and the antioxidant activity of phycocyanin was measured for the available markers. The following issues were resolved during the research: the concentration of ethanol in the DPPH solution was chosen in order to avoid precipitation of proteins in the reaction mixtures (50%); the ratio of the solution of phycocyanin to the DPPH solution was selected; the selected concentrations of markers for the construction of the calibration curves of natural antioxidants were chosen (flavonoids quercetin and rutin). The antioxidant activity of the obtained phycocyanin sample was determined 0.83 mg of quercetin equivalent/g and 1.63 mg of rutin equivalents/g at the value of antioxidant activity of phycocyanin solution of 36.77%. A method for studying the antioxidant activity was developed and the antioxidant activity of the alcoholic extract of biomass Cladophora sp. by available markers. The antiradical activity of the extract was measured at a wavelength of 515 nm after 15, 30 and 40 minutes. The following questions were solved: the ratio of tincture to DPPH solution was chosen; routine concentrations were selected to construct a calibration curve. Antiradical activity was 7.6 mg of rutin equivalent/g. Methods for the determination of polyphenols by spectrophotometric method using Folin Chikalteu reagent and aluminum chloride were developed.
