The subject of the study is butter 72.5% made in accordance with the requirements of DSTU 4399:2005 "Butter. Technical conditions" made only from cow's milk and (or) products of its processing in consumer packaging weighing 200 g. The purpose of the work is to develop possible recommendations for the algorithm of actions of reception measures, which makes it impossible for falsified butter to get into the system of the State Reserve of Ukraine for long-term storage. Research methods – research and analytical, statistical, comparative, experimental (research was carried out according to a complex of traditional and modern physicochemical, organoleptic and mathematical (processing of experimental data)) research methods were used in the scientific work. In the course of the research work, an analysis was carried out and research was carried out on butter, regarding compliance with the requirements of DSTU 4399:2005.
