The wide use of nitrogen fertilizers, necessary for the maximum increase in global food production, leads to an increase in the residual amount of nitrites and nitrates in crop production. It is known that these compounds can have a toxic effect on the human body.
The paper presents the results of one-time studies of nitrate content in selected vegetables, the so-called "borscht set", that are sold on the consumer market of the millionaire city of Ukraine (following an example of the city of Kharkiv).
The research was carried out applying the authors’ original methodology, which involves the collection and analysis of information about the territorial organization and diversity of Kharkiv's trade networks, the establishment of a network of spatially concentrated commercial service facilities for the population for one-time purchases, express testing of selected samples.
The content of nitrates in vegetables (beet, cabbage, potato, carrot) was measured and their safety for consumers was assessed. The results of a comparative assessment of the quality of vegetable grown in Ukraine and sold in various trade networks located in the city are provided. The general linear regression model showing relationships between the nitrate contents in vegetables and their weight was developed. Recommendations to reduce the levels of nitrates at vegetable consumption are offered.
