Object of study-heat and mass transfer processes during drying of thermolabile colloidal capillary-porous materials (TCCPM, vegetable raw materials) and their composite mixtures. The purpose of the research project is to increase the heat and mass exchange during the dehydration of TCCPM during the drying of functional plant raw materials with the preservation of biologically active substances of the initial components in innovative heat pump dryers. The technology of preliminary preparation for drying TCCPM (antioxidant and phytoestrogen raw materials) has been developed, energy costs have been reduced to 10-15% of total energy costs. Energy-efficient drying regimes have been developed: antioxidant raw materials, in which the dehydration process is intensified by 50% with a maximum preservation of betanin of 95%, as well as the dehydration process of phytoestrogen raw materials is intensified by 21% without critical changes in the value of the acid number. The main provisions of the physical and mathematical numerical model of heat and mass transfer processes during drying of TCCPM are formulated. As a result of calorimetric studies, it was established that the heat of evaporation of water in antioxidant raw materials is lower than that of the original components. The specific heat of evaporation of water from the phytoestrogen mixture was established. Derivatographic studies proved that the thermal stability of the created antioxidant composition is higher than the thermal stability of the constituent components. The innovative thermal technology of obtaining composite functional powders has been improved, taking into account the established parameters of the technological regimes of dehydration of the latter on drying equipment with heat pump equipment.
