Possible technological schemes of production with the use of ultrafiltration membrane devices have been determined, an analysis of juice production, their hardware design, construction, principle of operation, and shortcomings has been carried out. The research methods of the ultrafiltration process are substantiated, a description of the studied raw material is given, and the equipment and technological scheme of its processing is proposed. The technical implementation of the juice clarification process is proposed. The expediency of membrane processing of pectin extracts in the mode with vibration mixing has been scientifically substantiated and experimentally confirmed. The influence of temperature, pressure and duration of the process of membrane concentration and purification of pectin extracts on the characteristics of ultrafiltration membranes of the PAN type (polyacrylonitrile membranes) was established. Mathematical models of the processes of ultrafiltration processing of pectin extracts are proposed to determine the rational parameters of the processes based on the methods of dimensional analysis and the method of planning experiments. Rational parameters and regimes of the process of ultrafiltration concentration and purification of pectin extracts have been determined. Physico-chemical indicators of the quality of the final product - pectin concentrate according to various parameters of the processing of pectin-containing raw materials were established. The influence of vibration mixing on the performance of semipermeable polyacrylonitrile membranes during baromembrane treatment of pectin extracts was determined. A schematic diagram of a technological line for the production of dry pectin concentrates (pectin) using the developed equipment has been developed.
