As an innovation in the production of dairy-vegetable products, nano additives in the form of finely dispersed puree or cryopure were used - BAS enrichers from plant raw materials, as well as additives from natural spices in the form of powders and nanoextracts. During the development of the specified technologies, the type of fruit and vegetable raw materials - the basis for additives - was scientifically substantiated, the complex effect of the processes of cryo-, steam-thermal processing and mechanical destruction on the content of BAS, coloring, structure-forming substances during the production of finely dispersed additives was determined; for each product, compositions of fruit and vegetable additives have been selected, which make it possible to obtain new types of combined dairy and vegetable products and juice drinks for healthy nutrition without the use of harmful traditional food additives due to their use as recipe components. In 2 years (2021, 2022), the following were published on the topic: 1 monograph, 6 articles, of which 3 were co-authored with students (among the 6 articles: 1 - in a publication included in the SCOPUS journal; 1 - in specialized publications of Ukraine; 1 - in a foreign European edition of Estonia; 3 - in international editions of Japan, Canada, Great Britain), 26 abstracts of reports, of which 18 are co-authored with students. The results are implemented in the educational process (Acts of 11/16/2021 and 11/23/2021). The obtained results were presented at all-Ukrainian and international scientific and practical conferences held in Ukraine, Germany, Canada, Japan, Great Britain, and Sweden.
