Soybean oil with high oleic acid and low linolenic acid content is a new oil that has important technological advantages that will contribute to the gradual replacement of commercial oils. A key advantage of soybean oil with an increased content of oleic acid is its relatively high resistance to oxidation. One of the promising areas of soybean breeding is the creation of specialized varieties with a high content of oleic acid for food and technical use. Today, scientists and breeders are working on the development of new varieties and hybrids with increased content of oil and oleic acid, reduced content of anti-nutrients (trypsin inhibitors, urease). The process of soybean breeding is focused on creating varieties with optimized fatty acid composition of the oil, but research requires time and constant monitoring to determine the fat content and fatty acid composition. The method is suitable for use in the field of fodder production and technologies for obtaining high-quality livestock products, assessment of fodder and biological value of fodder, seed selection. Valuable fatty acids of soybean oil were studied by gas-liquid chromatography, the content was determined: linoleic (С18:2) 45-75%, oleic (С18:1) – 17-37%, palmitic (С16:0) – 10-15%, stearic (С17:1) - 2-4% and linolenic (С18:3) - 3-12%. The highest content of oleic acid was noted in Vinny varieties - 37.5% and Uborto - 36.5%. Based on the data of chromatographic analysis and the angle of refraction of soybean oil, an express method of determining the mass fraction of oleic acid in soybean oil was developed.
