The purpose of the work is to develop technologies of dietary products for therapeutic and preventive nutrition of people with metabolic disorders. Research methods – standard and special organoleptic, physicochemical, chemical, microbiological, functional-technological and rheological properties; mathematical methods of experiment planning and experimental data processing. Technologies have been improved, the range has been expanded and dietary products with increased nutritional value have been made for therapeutic and preventive nutrition of people with metabolic disorders: marmalade-pastila products (marmalade, marshmallow, zephyr) with low glycemic index through the use of coconut sugar, new generation sugar substitutes (erythritol, maltitol), herbal supplements; gluten-free brownies with reduced calories and improved amino acid composition; oatcake with a highly effective sweetener based on sucralose; shortcake based on flaxseed flour; products with dietary supplements "Nutrio-Gem", "Polysol" (respectively sour milk jelly, casserole based on sour milk cheese); emulsion systems for food enrichment with vitamin D; minced meat products with biologically active compounds (polyphenols, antioxidants, dietary fibers of fenugreek, driedleaves of a black currant, wakame seaweed) and improved functional and technological properties, increased shelf life. Predictive assumptions about the development of the object of study – the promotion of developed dietary products on the market and introduction into diets with the aim of reducing the risk of obesity, type 2 diabetes, cardiovascular and other metabolic diseases.
