The object of study is commodity evaluation of specialized products and the properties of raw materials that were used for their production. The subject of study is consumption properties, properties of raw materials, control and new types of specialized products. Research methods: marketing, physical, physico-chemical, functional-technological, structural-mechanical, microbiological, organoleptic, genetic, clinical, inversion-voltammetric, spectrophotometric, mathematical-statistical modeling methods. The main results of the work were presented at conferences of the All-Ukrainian and international level. The developed products were demonstrated and received positive evaluations at the All-Ukrainian scientific and practical conference of young scientists and students "Innovative development technologies in the field of food production, hotel and restaurant business, economy and entrepreneurship: scientific research of young people".
