The purpose of the work is the scientific and practical basis of improving the technologies of fats, fermentation products and fermentation products. Research methods – organoleptic and physico-chemical indicators of the quality of raw materials and products are determined according to standard methods; characteristics of the processes of melting and crystallization, as well as the content of solid triacylglycerols of experimental mixtures using differential scanning calorimetry; for the planning of experiments and data processing, mathematical methods were applied using MathCad and Microsoft Excel software packages. The results and their novelty: it was shown for the first time that the Or-factor, which takes into account the position of the seed at the time of impact on the seed tray, significantly affects the indicators of collapse of the small fraction of confectionary seeds; reasonable prospects of soy protein for nanotechnology; the possibility of extracting chlorogenic acid from sunflower cake with an aqueous solution of ethanol was proven; the use of new modified fats for confectionery products and the production of new fat-containing products, including those for health purposes, have been proven; the modern trend of expanding the assortment of alcoholic and non-alcoholic beverages based on plant extracts was defined and experimentally substantiated; Scope of application: oil and fat, winemaking, brewing and non-alcoholic industries of the food industry.
