The aim of the work was to study the peculiarities of the meat qualities of pigs of the red and white belt breed depending on the slaughter weight. Research methods - zootechnical: determination of productive and reproductive indicators, as well as evaluation of animals according to growth and development, fattening and meat qualities; physical and chemical: physical and chemical composition of meat and lard; biometric: determination of average values and their errors, probability indicators of research results, dispersion analysis, correlation coefficients. The relevance of the proposed study is determined by the need to study the problem of increasing high-quality pork, a comprehensive approach not only to production, but also to the implementation of a leading quality control system meat, lard and other pig slaughter products. On the basis of the conducted research, the formation of meat and fat productivity of the red-white-belted breed depending on the slaughter weight, depending on the slaughter weight, with different methods of breeding and the intensity of fattening of the obtained offspring, was comparatively studied.
