The purpose of the work is to study the factors of formation and improvement of consumer properties of finished products during the processing of plant raw materials grown in the Poltava region Research methods – general scientific research methods, in particular organoleptic and laboratory methods, methods of analysis and synthesis, statistical analysis method. Storage of food products is one of the stages of their life cycle. It is always accompanied by a change in the quality and mass of goods, which causes significant economic losses. Losses of grain annually make up about 10% of the gross harvest. Even greater losses during storage of fruits and vegetables - they reach 35%. Therefore, reducing losses and preserving the quality of food products at all stages of the promotion of goods from the producer to the consumer is an important source of replenishment of the food fund. Loss of quality is associated with a change in the chemical composition of products. These changes are accompanied by a partial or complete loss of product quality, which, in turn, leads to a loss in the quantity of food products. The practical significance of the obtained results lies in the fact that the theoretical and practical provisions of scientific research work have been brought to the level of specific proposals and methodical recommendations for increasing the profitability of production and obtaining the maximum profit, which is impossible without stimulation of sales markets, increase in production and sales volumes, strengthening of product competitiveness.
