The purpose of the work is the project of regulatory documentation, which regulates the requirements for quality indicators and the production of hot thermostable sauces. Research methods are empirical, theoretical, analytical, instrumental. A study of organoleptic, physicochemical and safety indicators was carried out. It was established that the indicators of the new product correspond to the current legislation of Ukraine. In order to justify the warranty period of the new products, the indicators of quality and safety of the flow of storage in a hermetic container under the conditions of storage, which are defined in the technical conditions, were studied. By summarizing the conducted research, a draft of Technical Conditions and Technological Instructions was developed for ready-to-consume sauces with a wide technological purpose, long-term storage, which can be produced on an industrial basis with further implementation both in the HoReCa segment and in trade (Retail) enterprises.
