The obtained experimental data confirmed the proposed assumptions regarding the possibility of mechanization of the cleaning process of this category of offal and the effectiveness of the proposed method. For the implementation of the developed method, the construction of a machine for the cleaning of mucous by-products is proposed, which allows you to implement the cleaning process and give this category of meat raw materials the necessary properties for the production of meat products, semi-finished minced meat of various nature and purpose, as a basis for the production of pates, and other sausages products.
