Results: The directions of the technological use of new red varieties and forms of selection of the NSC "IViV named after V.E. Tairov" with justification of optimal methods and parameters of processing for the production of red table wine materials. A comprehensive evaluation of red varieties and breeding forms of grapes was carried out according to physico-chemical and biochemical indicators. The physico-chemical and organoleptic indicators of wine materials from grapes of red varieties and selection forms, obtained at the NSC "IViV named after V. E. Tairov". In 2023, according to the results of the organoleptic evaluation, six red experimental samples were distinguished with an evaluation at the level of 7.85-7.95 points. Four of them were at the level of the reference European variety Cabernet Sauvignon - 58-38-8, 58-21-31, 56-63-15, 56-56-56. Two of them had a muscat aroma with a characteristic pronounced tone of tea rose (58-38-8, 58-21-31), two were typical for red wines and were characterized by tones of prunes, spices, red berries, tones of nightshade (56-63- 15 and 56-56-56). The suitability of the new varieties Odesa Pearl and Charivny for the production of rosé wines was shown, and technological instructions for the production of wine from the Charivny variety were developed.
