The object of research is vegetable semi-finished products, functional products from meat and fish minced meat. The purpose of the work is scientific substantiation and experimental development of technologies of functional semi-finished products for products from minced meat and fish mass. Research methods - physico-chemical, organoleptic, expert, system analysis methods, modeling, mathematical and statistical methods. Modern scientific approaches to the development of functional food products were analyzed and the need for the development of semi-finished vegetable technologies, which can simultaneously act as a water-binding component and a physiologically functional ingredient in meat and/or fish cutlet mass, was substantiated. The chemical composition of the plant components used in the research was studied - Jerusalem artichoke tubers, celery and ginger roots, and pumpkin pulp. The functional properties of Jerusalem artichoke tuber puree (antioxidant, complex forming with heavy metal salts) have been proven. Formulations and technologies of three puree-like vegetable semi-finished products have been developed, and their high consumption and nutritional characteristics have been proven. The influence of semi-finished products on the indicators of chopped mass (stability of the lipid fraction, pH, nutritional and biological value, digestibility) was determined, and the optimal amount in the composition of cutlet chopped mass was determined. Original technologies of cut products were developed, their technological indicators were determined and functional properties (herodietic potential) were confirmed. The project of the declaratory patent, technical documentation (TU) was developed, tastings were conducted and implemented in real production conditions.
