An organoleptic analysis was carried out and a group of wines with a tasting rating of 7.9 - 8.0 points was selected. According to the indicator of sugar accumulation, Odesa pearl and Charivnyi varieties stood out, and according to the level of technological reserve of phenolic substances - Odesa pearl, Illichivskiy early and Charivnyi varieties stood out. According to the results of the organoleptic evaluation, selection forms 56-62-39 (full, rich taste of wine with tones of currant, nightshade, poppy, green pepper and spices), 58-37-40 (fresh notes of mown grass and red berries - raspberries and strawberries) are distinguished. , 54-56-88 (tones of nightshade, light nutmeg, pomegranate, prune).
