Object of research: improvement of white crystalline sugar technology of domestic production. Subject of research: technological properties of sugar beet, beet shavings, diffusion and purified juices, and sugar production intermediates under conditions of application of physical and chemical methods of influence on them. Aim: to determine the influence of various factors on the quality of white sugar obtained from sugar beet and to increase its shelf life without deterioration of quality characteristics. Research methods: - physical and chemical, performed using modern unified European ICUMSA methods; - microbiological methods of control in sugar beet production; - statistical processing of experimental data. Physicochemical parameters of sugar beet selected in the beet sowing zones of Vinnytsia region (Kryzhopil sugar plant) were determined. The data obtained can be used to clarify knowledge and supplement the technological regulations for processing raw materials.
