PROTEIN DETERMINATION METHOD" The object of the study is meat, meat products, meat-based canned foods for baby food. The purpose of the work is to develop a methodology for determining the protein content in meat and meat products as an enterprise standard for use in the testing department (testing laboratory). To solve the set goal, the following tasks must be solved: - to develop a method for determining the protein content in meat and meat products using the Kjeldahl method. Research methods: the research was carried out using the Kjeldahl method. The research was conducted on the basis of the testing laboratory of the SE "KYIVOBLSSTANDARTMETROLOGIA". The developed method applies to meat and meat products, as well as meat-based canned foods for baby food and establishes a method for determining the protein content according to K'eldahl. The essence of the method is mineralization of the sample according to Kjeldahl, distillation of ammonia into a solution of boric acid, followed by titration of the studied sample. The standard reference method for protein determination is the Kjeldahl method [1, 2], based on the combustion of organic components in the presence of sulfuric acid and the determination of released nitrogen.
