The object of the GDR research is the hotel and restaurant industry of Ukraine. The purpose of the research work is to substantiate the theoretical and methodological principles and scientific and practical recommendations for the development of the hotel and restaurant industry of Ukraine in conditions of dynamism and instability. The theoretical foundation of the study of the development of the hotel and restaurant industry has been developed; the essence of the hotel and restaurant industry is summarized and the key determinants of its development are systematized; the essential characteristics of the hotel and restaurant business were investigated; the main trends in the development of the global and domestic hospitality industry are determined; the current state of development of the hotel and restaurant industry of Ukraine was diagnosed and the development strategy was determined; the role of hotel and restaurant industry cooperation is analyzed; the strategy of ensuring the economic security of hotel and restaurant business enterprises is substantiated; the trends and directions for improving the organization of service are summarized; perspective directions of development are highlighted. Scientific novelty of the work: improvement of theoretical and methodological foundations and scientific and practical support for the development of the hotel and restaurant industry. The proposed scientific and practical recommendations and conclusions can be used to form and implement a strategy for the development of the hotel and restaurant industry of Ukraine.
