As a result of experimental studies, a mathematical model was developed for the dependence of the induction period on the extraction temperature of sunflower oil and the degree of grinding of the spicy aromatic raw material rosemary. Rational conditions have been established for the process of extracting flavoring components from spicy aromatic raw materials (anise seeds, cumin seeds, coriander and rosemary) with sunflower oil. The best antioxidant effect is shown by sunflower oil extract with rosemary; the worst is anise seed oil extract. At the same time, the oil extract with the addition of a mixture of aromatic components has a higher antioxidant effect than the control. A mathematical model of the dependence of the induction period of oil extracts on the concentration of the introduced mixture of taste-aromatic impurities was obtained. Rational concentrations of spicy-aromatic raw materials (%) for obtaining oil extracts have been established. It was found that the use of rosemary increases the induction period of the oil extract from a mixture of cumin, anise, and coriander seeds.
