The purpose of the work is to substantiate and develop recipes and recommendations for formulating cream-pastes based on sunflower seed kernels with a reduced amount of fat. Research methods: the moisture content in sunflower seeds was determined according to DSTU 4811:2007; determination of the mass fraction (%) of oil in terms of dry matter in accordance with DSTU 7577:2014; mass fraction (%) of crude protein in terms of absolutely dry matter according to DSTU 7169:2010; acid number of oil (mg KOH/g) according to DSTU 8839:2019; mass fraction of oleic acid in oil isolated from seeds (% of the total fatty acids) according to GOST 30418-96; processing of the obtained results was carried out using Місrosoft Ехсеl software packages. The physical and chemical parameters of the initial raw material for cream-pastes - the kernels of confectionery-type sunflower seeds were experimentally established. The composition has been scientifically substantiated and formulations of cream-pastes based on sunflower seed kernels with a reduced amount of fat have been developed. The organoleptic and physico-chemical parameters of the developed cream-pastes have been determined. The colloidal stability of cream-pastes at temperatures of 4 and 25 ºС was studied. The shelf life of cream pastes using non-roasted seeds and a water content of 35% has been established: at a temperature of 25 ºС - no more than 27 days; for 4 ºС and air humidity 75% - 6 months. Recommendations for the formulation of cream-paste based on sunflower seed kernels with a reduced amount of fat have been created. A draft regulatory documentation for the resulting product has been developed.
