The purpose of the work is to determine the physical properties and protective effect of media containing DMSO and/or nano-sized particles, nanocrystalline cerium dioxide and hydrated C60 fullerene, for cryopreservation and storage of biological objects at low temperatures. Cryobiological, thermoplastic deformation, spectrophotometric, photocolorimetric, microscopic, biochemical, cultural methods were used in the work. It was established that NDC in concentrations of 0.02 - 2.1 g/l leads to significant changes in the phase-structural transformations of cryoprotective media containing DMSO, increases the glass transition temperature and reduces/levels off the degree of recrystallization processes in the experimental samples. NDC as a part of the protective medium has a multidirectional effect on the character of the generation of blood lipoperoxidation products at different times of hypothermic storage, which may indicate the ability of nanoparticles to act on the membrane of erythrocytes during hypothermic storage. Pretreatment of oysters in seawater with the addition of fullerene C60 slows down the activation of free radical oxidation processes of biopolymers and reduces the accumulation of lipid products in the tissues of molluscs. Fibroblast-like cells, cryopreserved with the addition of 10 μg of NDC to 0.5 ml of cryoprotective medium containing 10%, 7% and 5% DMSO retain viability and the ability to recover in monolayer culture. It has been proven that fullerene C60 affects the spectral characteristics of the intrinsic luminescence of yeast cells S. cerevisiae and changes the organoleptic profile of wine in winemaking technologies.
