Information × Registration Number 0224U001439, 0120U100504 , R & D reports Title Physical and mathematical modeling of heat and mass transfer processes during food production popup.stage_title Head Pak Andrey O., Доктор технічних наук Registration Date 23-01-2024 Organization State Biotechnology University popup.description2 On the basis of the conducted research, it was proved by modeling the effect of induced heat and mass transfer (InHMT) in the presence of solid, liquid and gas phases in a thermostat with gaps between phases that "starting", "flowing" and "completion" of the InHMT effect are possible with such an organization of the process; it is established that the general necessary condition for the realization of the InHMT effect is the preservation of the integrity of the gas medium inside the thermostat; the specific productivity of the working surface of the thermostat with InHMT is established; the main parameter of the order of the InHMT effect is established - the presence of the continuity of the gas medium according to the partial pressure of the liquid vapor inside the thermostat; the found effective filter coefficient of the obturator is necessary to implement the InHMT effect; the requirements for the design features of the heat and mass exchange module of the apparatus for drying with the InHMT effect of wet raw materials with high specific porosity have been developed; suggested optimal conditions for making marshmallows with anthocyanin additives - krias powders from black rowan and Sudan rose; a prototype of a vibro-impact separator using air flow was developed, for which tests were carried out by the method of a multifactorial experiment; the effectiveness of using a pneumatic separator with an inclined channel for the preparation of safflower seed material has been proven. The main research results are reflected in 10 works, including 3 articles, 1 of which is in a scientific publication included in the Scopus database, 7 abstracts of reports at international and all-Ukrainian scientific and practical conferences. The results obtained in the research are implemented in production and in the educational process of DBTU.
