The relevance of the work is the determination of optimal criteria for evaluating and controlling the quality of monofloral honeys, which significantly affects the market price of honey and the profitability of the industry as a whole. The object of the research is natural bee honey from linden and buckwheat. The subject of the study is honey quality indicators. Purpose: to develop criteria for determining the quality of monofloral honey from linden and buckwheat, to identify and substantiate their main quality indicators; establish a relationship between the physico-chemical quality indicators of monofloral honey from buckwheat and linden and their pollen composition. Research methods - the analysis of organoleptic and physicochemical properties was carried out using the methods recommended by DSTU 4497: 2005 "Natural honey. Technical conditions". The obtained results were processed statistically and mathematically using the methods of variational statistics using the program "Microsoft Excel - 15.0" to determine the arithmetic mean (M), standard error (m) The performers carried out monitoring and analysis of quality indicators of linden and buckwheat honey. A comprehensive approach to the evaluation of monofloral honey from linden and buckwheat has been developed, which makes it possible to determine its peculiarity based on organoleptic properties, specific physicochemical indicators and indicators of naturalness. The relationship between the physicochemical indicators of the quality of monofloral honey from buckwheat and linden and their pollen composition has been established.
