The purpose of the work is to develop technologies for the rational processing and use of plants and derived products of plant origin in order to solve the problem of the shortage of useful nutrients in the diet of the population and reduce the burden on the environment. The value of the expected results lies in the development of technologies for waste-free processing of vegetables and fruits of wild plants, providing practical recommendations for the use of derivatives from their processing in food and culinary products. The use of technologies for the rational processing of plant raw materials, with the formation of a minimum amount of industrial waste, will contribute to the improvement of the ecological situation in the state and the stabilization of the ecological balance. The processing of derived products of plant origin into food additives with functional properties will solve the problem of the shortage of useful nutrients in the diet of the population, due to the creation of food products with high nutritional and biological value. The introduction of developed technologies into production will allow to expand the existing range of products with functional properties. When using the developed technologies, the cost of food products will be reduced due to the use of cheap raw materials, while the quality and safety of new products will meet the requirements of current legislation.
