Efforts were focused on solid waste disposal with the ultimate goal of promoting environmentally sustainable solutions for the canning industry. There is a need to increase the level of environmental safety, to reduce the environmental impact of canning industry enterprises through the development of effective waste disposal methods. In modern conditions, one of the ways to dispose of food industry waste is the introduction of biotechnologies and biotechnological industries. The study confirmed the environmental benefits of integrating energy-saving and waste-recycling technologies throughout the entire technological chain of canned fruit production, which contributes to increased environmental sustainability and safety. In order to improve the composting technology of food waste of enterprises of the fruit and vegetable canning industry, it is justified to add mineral or microbiological additives to the compost mixture, which will lead to the activation of microbial activity at the initial stages of the process. In the course of the experiment, abiotic, biotic and indicators of maturity of the obtained compost were studied. It has been proven that the process of ripening of compost with the introduction of a mineral additive is accelerated by 2.6 times under thermophilic conditions and 1.7 times under mesophilic conditions, and the process of ripening of compost with the introduction of a microbiological additive is accelerated by 3.8 and 2.4 times, respectively.
