They were initially deposited in the Depository of the Institute of Microbiology and Virology of the National Academy of Sciences of Ukraine. Strain pasports were developed, certificates of deposit were obtained, and a safety opinion was issued, which allows their use in the bakery industry. A composition of pure cultures of lactic acid bacteria "Biolight" was created for the production of bakery sourdough in fermented wheat flour baking technologies as an alternative to chemical sourdough. The compositions of pure cultures of lactic acid bacteria and yeast "Biomax" and "Stimul" for bakery starter cultures in the technologies of rye, rye-wheat bakery products were created. The process of baking sourdough starter cultures based on pure culture compositions "Biolight", "Biomax" and "Stimul" was developed. Instructions for the use of "Biolight", "Biomax" and "Stimul" for the preparation of bakery starter cultures were developed and approved: breeding and production cycles. Laboratory and production tests were carried out and the effectiveness of the use of starter cultures based on pure cultures "Biolight", "Biomax" and "Stimul" in bread technologies of various assortments was established, which is confirmed by the relevant Acts of Approval and Implementation.  Product Description popup.authors Astakhova Liudmyla O.
