The analysis and generalization of statistical data and information and patent research on the main indicators of the dairy industry and production of products for 2022-2023 were carried out in the direction of: production of dairy raw materials, dairy products, trends in the development of milk processing technologies in the dairy industry. The received information has been processed. The conjuncture of the dairy market in crisis conditions was studied.
