It was found that different methods of castration have different but significant (p≤0.001) effects on the intensity of metabolic processes in boars and pigs and create differences in the algorithm for the formation of meat quality. The factor of castration method significantly affects the content of lean meat in pig carcasses with a strength of 2.9 % (p≤0.01). The level of lean meat content for each castration method has a special manifestation, which depends on the pre-slaughter live weight of animals by 10.7 % (p≤0.001). Based on the results of the research, the System for the use of immunological castration of pigs in the modern aspect of improving animal welfare and production of quality pork was developed. The proposed system provides clear guidelines for the use of immunological castration of pigs. It consistently reveals the positive aspects and disadvantages of the immunocastration method for fattening boars compared to the traditional method of surgical castration. The priority of the System is the scientific and practical justification of choosing the appropriate method of boar castration or sow castration for the targeted production of fattening stock of the desired quality level and the targeted use of meat raw materials in the processing process to obtain quality products. A comprehensive system for evaluating immunocastrated pig carcasses and pork quality has been developed for targeted sorting and reducing free moisture losses. The economic efficiency of using the System for assessing the quality of carcasses and meat of immunocastrated pigs is 0.12 UAH per 1 kg of pork sold. A new point-cluster methodology for sensory evaluation of the "boar smell" in meat samples of immunocastrated pigs was developed. Product Description popup.authors Manyunenko Svitlana A.
