In the process of carrying out research work on the basis of analytical and experimental data, methods for modifying collagen-containing raw materials (pork skin) were determined. The influence of certain methods of modifying collagen-containing raw materials on its functional and technological properties was studied. Using certain modification methods and their influence on the functional and technological properties of collagen-containing raw materials, technological schemes for modification and production of a protein stabilizer have been developed. The optimal composition of a protein-fat emulsion, which includes a protein stabilizer, soy isolate, pork or beef fat, and water, has been substantiated and calculated.
