The ranges of the content of whey proteins and non-protein nitrogen have been established for the identification of the protein composition of milk raw materials. A comprehensive assessment of the protein composition was carried out and the regularities of the formation of the structure of the nitrogen-containing fractions of dairy raw materials from heat treatment and the duration of storage of dairy products were established, which allow us to identify their influence on the quality of the finished product. The method of sample preparation and the conditions for the analysis of serum proteins and non-protein nitrogen have been improved. The importance of controlling the nitrogen-containing fractions of milk and dairy products, the falsification of which leads to an uncontrolled technological process during their production, is shown.
