The object of study is the working conditions of the company's staff. The aim of the study is to investigate the negative physical, chemical, biological and psychophysiological factors of production; to determine the main indicators of hygienic working conditions in the workplace; to determine the class and degree of severity and intensity of work of production personnel. Research methods are experimental (basic physical and chemical methods of analysis), mathematical and statistical, and calculation and comparison. Results: negative physical, chemical and psychophysiological factors of bread and bakery products production; determination of the main indicators of hygienic working conditions at the workplace: temperature, humidity, air velocity; determination of the class and degree of labour intensity and hardship of bread production personnel. Developed: recommendations for certification of workplaces in the main speciality of bread production - baker.
Scope of application: M 72.19 Research and experimental development in the field of other natural and technical sciences.
