Registration Date 07-06-2024 Organization Odesa State Agrarian University popup.description2  The purpose of research work is aimed at increasing the safety and quality of products of animal origin by improving methods and schemes of their monitoring; conducting a comparative legal analysis of the legislation of Ukraine and the European Union. The object of the study was the quality and safety of food products, methods of their control, regulatory and legal acts. The subject of the study is indicators of quality and safety of food products, separate legislative acts of Ukraine and the European Union in matters of quality and safety of raw materials and food products. The experimental results of research work served to develop fundamentally new methods of determining the general toxicity of food products, in particular meat of slaughter animals, oysters, octopus, sea scallop, cuttlefish, rapan, squid; which is protected by Patents of Ukraine. A method for determining the toxicity of milk and dairy products and a method for determining the toxicity of honey, as well as the toxicity of chicken eggs, under specific conditions, have been developed. A method for determining antibiotics in meat and a method for determining hydroxymethylfurfural in honey has been developed. The obtained results can be used in the practical activities of laboratories at food industry enterprises, laboratories of the State Production and Consumer Service of Ukraine.
