Research subjects are various culinary semi-finished products for flour culinary products, as well as physico-chemical and structural processes that occur during their preparation and storage The purpose of the work — is the development of new culinary dishes, drinks and semi-finished products using plant raw materials of domestic origin. Research methods — are organoleptic, physico-chemical, rheological and mathematical-statistical, according to generally accepted and special methods; study of the influence of the latest ingredients on the main technological indicators of semi-finished products; modeling of the production processes of individual semi-finished products and the processes of combining them into separate products; mathematical modeling of the choice of the concentration of the latest additive, processing and statistical analysis of the obtained results. Types of plant raw materials were studied, their possibility of use in the production of culinary products was determined, technological properties and the influence of concentration on the quality indicators of finished products were investigated; optimal parameters for introduction into recipes have been established. Modeling of recipe compositions and taking into account the obtained physical and chemical data when drawing up recommendations for the use of semi-finished culinary products and technological maps was carried out. As a result of the conducted research, 2 author's certificates of Ukraine for unique research methods, 86 patents of Ukraine (26 for inventions and 60 for utility models) were obtained, 6 new calculation card dishes were developed using developed semi-finished products. Participated in 2 meetings of the Tasting Commission for the evaluation of new developments.
