Study of the proteolytic activity of the culture. Purpose of the work: To conduct research and find the optimal parameters for cultivating microorganisms Bacillus subtilis IMB B-7521 to achieve the maximum possible proteolytic activity. Research methods: microbiological, physicochemical and biochemical. The scientific and technical work carried out included: - research and optimization of all necessary physiological and biochemical parameters, including the selection of seed material, identification of their nutritional needs, growth properties of the studied bacterial strain; - determination of the maximum possible specific activity of the strain - preservation of the biological activity of the producer. It was established that: The main technological parameters can be reproduced under conditions of industrial fermentation. That is, it is possible to carry out an effective fermentation process of the microorganism and obtain a culture liquid with a high titer of colony-forming units. .It was found and practically proven that the optimal cultivation parameters for the strain are the cultivation temperature of 24°C at a pH range of 6.5 – 7.4 and aeration of 0.2 vol. air/1 vol. culture. strain. Cultivation should be carried out for 36-48 hours. The maximum proteolytic activity of the strain under these conditions is achieved at 12 hours of growth and stabilizes at the level of 570-590 CFU/ml.
