This allows to improve the quality of service, optimize processes, reduce costs and provide competitive advantages, such as competitiveness (unique services and service improvement), automation (time saving for guests and staff), personalization (mobile applications, loyalty programs, customer needs analysis), sustainable development (reduction of energy consumption and waste), security (contactless technologies and control systems). Based on the foregoing, the purpose of the study is to develop and manage scientifically based innovative technologies in the hotel and restaurant business to increase competitiveness. The article considers the current status and development of hotel and restaurant facilities, adaptation of the Ukrainian hotel and restaurant sector to international standards, the main methods of increasing competitiveness, and the most common groups of innovations. The author analyzes the current conditions of the hotel and restaurant business and the factors affecting competitiveness, examines the factors and prerequisites for the introduction of innovative technologies, the features of effective management and the procedure for increasing competitive advantages. Recommendations on the use of foreign experience and the feasibility of its transformation into the hotel and restaurant business of Ukraine are provided; an algorithm for improving the activities, implementation and management of innovations in the hotel and restaurant sector is developed. Recommendations on the integration of modern technologies into the activities of hotel and restaurant business enterprises in order to adapt to the present and increase their competitiveness are provided.
