Subject of research: wort from starch-containing raw materials, yeast, technology of ethanol from starch-containing raw materials, by-products of alcoholic fermentation, mature wort, ethyl alcohol, crotonaldehyde. An information analysis of crotonaldehyde formation’ dependence on the technological conditions of starch-containing raw materials` fermentation, as well as an analysis of the factors of the technological process that affect the amount of crotonaldehyde formation in the distillate was carried out. The influence of individual technological stages of ethyl alcohol fermentation on the formation of crotonaldehyde was determined. Based on obtained data, methodological recommendations were developed to minimize the amount of crotonaldehyde formation during the production of ethyl alcohol for the needs of the food and pharmaceutical industries.
