Object of research: quality indicators of resistant potato starch. Subject of research: native and modified resistant starch. Research methods: Statistical, analytical, microscopic, physicochemical, rheological. The consumption of resistant starch is growing annually, and accordingly, its production in the countries of the world. Despite the growing demand, there are currently no systematic approaches to quality control of resistant starch of the PC3 type. The morphology of starch particles studied, and it shown that during two-cycle processing of dry starch, partial "annealing" of the surface of the granules occurs. This leads, first all, to a decrease in the product yield from 94.98% to 86.38%. It substantiated that the method of thermal treatment affects the physicochemical indicators, namely: during processing of starch suspension, the indicators of water absorption and oil absorption capacity, solubility, swelling ability are higher; during two-cycle processing of dry starch, the indicators of GE, degree of transparency, resistance are higher. It has proven that thermal two-cycle treatment of starch reveals porosity, thereby increasing the bulk density, the angle of true slope and the ability of starch to bind water. In addition, the rheological indicators and gelling ability enhanced. An industrial test conducted and a corresponding act obtained, recommendations were developed for the systematization of methodological approaches to determining the functional and technological indicators of resistant starch.
