Based on the conducted literature analysis, it is possible to distinguish the main groups of dry instant dairy products that are presented on the domestic market, these are dry canned milk, dry dairy products with plant components, dry milk formulas for special nutrition (low- and lactose-free, with fully or partially hydrolyzed protein, etc.), dry formulas for athletes, dry milk formulas for enteral nutrition, dry milk formulas for baby food, dry milk formulas of the dessert group (for the production of ice cream, cocktails, puddings, etc.). The vast majority of dry milk formulas for enteral, sports and baby food are of foreign production, which significantly affects their cost. An analysis of the range of instant dry dairy products available on the domestic market was conducted, and efforts were made to expand the range, in particular, instant dry milk cereals. Based on the obtained literature data, physicochemical and technological studies of grain and dairy raw materials, the recipe composition and technology of dry milk cereals were developed.
