Objects of research - technologies of molded potato chips, organic tomato snacks, multi-cereal food concentrates; chemical composition and technological properties of different types of milk powder. The aim of the study is to improve technologies and expand the range of food concentrates with high nutritional value and balanced chemical composition, organic products. Research methods - conventional and special with the use of modern instruments and information technologies. The technology and recipe composition of molded potato chips using non-traditional raw materials have been scientifically studied and improved to increase their nutritional value and extend their shelf life. Organic tomato snacks with increased nutritional value were developed by the first time and their technology was scientifically demonstrated. Ways to expand the range of products were scientifically explained and recipes for multi-cereal food concentrates of high nutritional value were developed. A comparative analysis of the quantitative and qualitative chemical composition of cow's, mare's, goat's and sheep's milk powder was carried out and the use of mare's and sheep's milk as raw materials for baby food products was explained. The advantages of the proposed scientific solutions are the absence of analogues of the developed products in the domestic market and a high social effect. The production of the developed products can be implemented on existing technological lines at food industry companies, taking into account the improvement of technological parameters of the process.
